Most people think of steak, potato salad, and beer to celebrate Labor Day. What better foods to celebrate our year-long work than steak and beer? But I like to shake things up a bit. So MY labor day recipe will be a delicious salmon and stir fry bok choy dish I whipped up.
1 cup of rice
3 heads of bok choy
2 large garlic cloves
1/8 tsp ginger puree
Gluten-free soy sauce
1. Cook the rice according to package directions.
2. While the rice is cooking, sprinkle the salmon with some garlic powder, ginger powder, salt, pepper and then drizzle soy sauce over. Grill it until it’s cooked through.
3. While the salmon and rice are cooking, slice and rinse the bok choy, and stir fry with the garlic and ginger in some oil for a few minutes until soft.
4. Once the rice is done, lay it along the bottom of a plate or wide bowl, place the bok choy on the rice and then the salmon on top. Drizzle with soy sauce.
Overall, all I have to say is – YUM. I didn’t really measure out the spices I sprinkled on the salmon, you’ll just have to add according to your preferences. Also, because I am sans gluten, I used gluten free soy sauce but you can use regular soy sauce if you wish.
As for the ginger, I have a little jar of pureed ginger that I love to toss in dishes. If you do not have that, you can also mince or finely dice some ginger root and add that to the stir fry. Or, even sprinkle some ginger powder over the stir fry too. Just keep tasting the stir fry until it has the ginger level you like.
