Guacamole is pretty awesome. I don’t know if I trust people who don’t like guacamole – how can you not like guacamole?!?
There are a bunch of different ways of making guacamole. My boyfriend has perfected his recipe, which is what I will share with you today. The cool thing about guacamole is that it’s kind of hard to mess up!
1/2 onion, diced
2 cloves garlic
2 tbsp olive oil
1/4 c. cilantro, diced
1 tomato, diced
1 lime, juiced
Salt, to taste
1. Saute the onion and garlic in the olive oil on medium heat until slightly cooked. Add the paprika. Set aside.
2. Mash the avocados in a bowl. Add the cilantro, tomato and lime juice and mix well.
3. Add the sauteed onions and garlic to the bowl, mix well and then add any salt, if desired.
So you might be thinking, hmmmm – saute the onion and garlic? Yes, we do. My boyfriend LOVES onion. While I appreciate onion, I’m not a huge fan of raw onion. Well, he found if he sauteed it, he could add his desired amount and I didn’t have to deal with the harshness of raw onion – it’s a win! I really like the flavor of the sauteed onion and garlic too.
As for the salt, I kept it ‘to taste’ because people can vary so much on how much salt you like. I would start small, perhaps 1/8 teaspoon and then go from there if you’re not quite sure. Sometimes we don’t add any salt at all, just depends on our mood and how the other ingredients are tasting.
Our favorite tortilla chips are the ones made by Whole Foods. They are SO delicious. A little ginormous, so you have to break it into pieces, but very very yummy.
